The Kalamata olive is a large, dark purple olive with a smooth, meaty texture, named after the city of Kalamata in the southern Peloponnese, Greece. The Kalamata olive is here prepared in brine (water, sea salt, vinegar) to enhance its powerful and fruity aromas. This recipe highlights the strength of character of the Kalamata olive.
